Cake Decorating: Chocolate Piping

I hope you all have had a good break! Over the break, I was working on developing my decorating skills by working with chocolate to pipe designs. This was harder than using buttercream to pipe because it was messier and didn't come out as smooth.

The most important thing to make sure the chocolate would pipe correctly is getting it the right temperature. "Overheating will cause the chocolate to take on a "white bloom" once hard," (Sullivan, 41). Has anyone who has tried decorating heard of this issue? Because I sure hadn't.

So, to avoid this, I followed the directions carefully and it turned out really good! I used Nestle's semi-sweet chocolate chips which I was concerned wouldn't work as well as other chocolate, however it came out the perfect consistency.

When I first began piping on the parchment paper, my hand was shaky and I couldn't get good designs. However as I kept practicing, my hand became steadier and I was able to make cool patterns.

To frost the cake, I made a coffee buttercream which turned out really well. I followed what the book said and made sure to let the coffee cool and add 2 tablespoons of it and only one tablespoon of cream (Sullivan, 25). I used the crumb-coating method again and I made sure to let the first layer harden before I finished coating it. However I wish I would've spent more time smoothing out the top layer.

Overall I had a lot of fun piping the chocolate designs and I think I will try this skill for future cakes.

  1. Your cake turned out very nice. I really like all of the chocolate designs. I was wondering if this cake was made for any special occasion like maybe a birthday, or was it made just for fun.

  3. I absolutely love the design for your cake! It looks amazing -- making me crave some! Do you do the designs on paper first and then finish, or something else? I'm gonna go get some cake right now...

    1. Haha thank you! Yes, I did the designs on parchment paper and let them cool in the fridge! Then it's super easy just to peel it off. It was a really neat design recommendation in my book!
